Enchiladas are a Mexican dish enjoyed by many people today.

The history of enchiladas the earliest known indigenous people who lived in a lake region of Mexico according to tradition ate small fish wrapped in corn tortillas. And, Bernal Díaz Del Castillo wrote about Europeans enjoying a feast that was given by Hernan Cortes at Coyoacan during the time of Spanish conquistadors.

The food that was served at this occasion was also wrapped in corn tortillas. And that’s not all…others believe that The history of enchiladas comes from the papadzules, a Mayan dish that's been around since before Columbian times and still strongly connected today in the Yucatan.

There are so many different kinds of enchiladas out there you got your Mexican chicken, creamy chicken, sour cream chicken, beef, Green Chile, enchilada soup, spinach, enchilada pie, crock pot chicken enchiladas, vegetarian, crunchy enchiladas, seafood, apple enchiladas cream cheese, deer, enchiladas blancas, lobster, Mexican enchilada omelets, Swiss enchiladas, turkey, shrimp. "estas no son enchiladas" is an Expression use by Mexicans meaning (these are not enchiladas) it is use to describe to someone something that's not easy.

I think that the history of enchiladas must of started closer to the beginning of the tortilla, According to the Mayan story, back in ancient times a peasant invented the tortilla for his starved king. Many believe that the tortilla dates back thousands and thousands of years before Christ, and since Enchiladas are so simple to prepare and the many ways that the tortilla can be use as a wrapper, I think that the Enchilada must have been around since the beginning of the tortilla or close to it.
